We start with select muscle from the rear leg, not parts and pieces of pork portions. Our original ham is cured right on the bone. The bones are later removed and any excess fat trimmed. Every ham is hand stuffed in netting and sent to the smoke house to be slow cooked for a full 14 hours.
Our traditional methods used in ham preparation require no artificial ingredients, no fillers or binders and most importantly no MSG or gluten!
The cure formulas we use result in hams lower in sodium. Compared to USDA data, our ham has 33% less sodium.
